★ My signature & most popular workshop
The flagship corporate experience

The Pastry Challenge in Montreal

Together, your team makes a personalized letter cake : a cake shaped like letters that spells your company name, your team name or the word of your choice (up to 6 letters, to be decided together). Each brigade makes its own letter, and the word only appears once all the letters come together: the ideal activity to combine team spirit and a chef's know-how.

Open to all skill levels, even those who never cook. Optional, to mention in your quote request: a quiz sets the pace of the workshop, and correct answers earn perks (choice of ingredients or decorations, bonus minutes with the chef…), in the spirit of TV cooking competitions.

How the workshop runs:

1. Master class : a demonstration of real ladyfinger sponge, the base of the cake 2. Pro technique : your team makes a whipped ganache, vanilla or dark chocolate (your choice, decided before the workshop), and learns to handle a piping bag 3. Personalization : cutting seasonal fruit, then everyone pipes on their letter 4. Creativity : assembly and decoration with a bar of sweet toppings
Included: a pastry chef to lead the workshop, ingredients, utensils, aprons, setup, cleanup, boxes so everyone can take their creation home and the recipe sent by email · Duration: 1.5 to 2 hours

Frequently asked questions

Everything about pastry team building

How long does the workshop last?

Between 1.5 and 2 hours, depending on the group's energy. I set up before your team arrives and clean up afterwards: all you have to do is enjoy.

How many people can take part?

From 4 people, with no upper limit: the price per participant decreases with group size, and for more than 50 people I adapt the workshop format to your group. Write to me and we'll build the right option together.

Where does the activity take place?

At your office, in a room of your choice or in a room I can offer for rent (price depends on the venue), on the Island of Montreal (travel included) and in Greater Montreal (travel fees extra). I bring all the equipment, ingredients and aprons. No kitchen is needed: all it takes is a water source and enough tables for the participants and my setup. For the Pastry Challenge, I demonstrate the ladyfinger sponge (the sponges for the final cake are baked in advance), and your team makes the ganache, cuts the fruit, pipes and decorates by themselves.

What if we don't have a room?

No problem: I can offer a room rental suited to the workshop in Montreal. The room rental is then added to the workshop price: its cost depends on the venue and the size of the group, and it is stated in your quote.

Can the workshop be held in English?

Yes, I teach in French or in English, and I can switch between the two for bilingual teams.

Do prices include taxes?

The prices shown are net prices per participant: no tax added. Travel is included on the Island of Montreal; outside the island (Laval, South Shore, North Shore and beyond), travel fees apply and are clearly stated in your quote.

How do you handle allergies?

Let me know about any allergies or special diets when you request a quote: I adapt the recipe as much as possible. However, the workshop takes place in an environment where gluten, eggs, milk, tree nuts and peanuts are handled, so I cannot guarantee the complete absence of traces.

How far in advance should we book?

Ideally 3 to 4 weeks ahead, and even earlier for December, the busiest month. For a date coming up soon, write to me anyway: I reply within 24 hours.
